Classic Veggie Sandwich Recipe

Ingredients:

  • 8 slices of whole-grain bread
  • 1/2 cup hummus
  • 1 cucumber, thinly sliced
  • 1 bell pepper, thinly sliced
  • 1 medium tomato, thinly sliced
  • 1/2 red onion, thinly sliced
  • 1 cup lettuce leaves
  • Salt and pepper to taste
  • Optional: Cheese slices, avocado slices, mustard, or mayonnaise

Instructions:

  1. Lay out 8 slices of whole-grain bread.
  2. Spread a generous layer of hummus on 4 of the bread slices.
  3. Layer cucumber, bell pepper, tomato, red onion, and lettuce on top of the hummus.
  4. Season with salt and pepper to taste.
  5. If desired, add cheese slices, avocado slices, mustard, or mayonnaise.
  6. Place the remaining 4 slices of bread on top to create sandwiches.
  7. Press the sandwiches gently and, if preferred, cut them in half or quarters.
  8. Serve and enjoy your delicious and wholesome veggie sandwiches!
