Ingredients:
- 8 slices of whole-grain bread
- 1/2 cup hummus
- 1 cucumber, thinly sliced
- 1 bell pepper, thinly sliced
- 1 medium tomato, thinly sliced
- 1/2 red onion, thinly sliced
- 1 cup lettuce leaves
- Salt and pepper to taste
- Optional: Cheese slices, avocado slices, mustard, or mayonnaise
Instructions:
- Lay out 8 slices of whole-grain bread.
- Spread a generous layer of hummus on 4 of the bread slices.
- Layer cucumber, bell pepper, tomato, red onion, and lettuce on top of the hummus.
- Season with salt and pepper to taste.
- If desired, add cheese slices, avocado slices, mustard, or mayonnaise.
- Place the remaining 4 slices of bread on top to create sandwiches.
- Press the sandwiches gently and, if preferred, cut them in half or quarters.
- Serve and enjoy your delicious and wholesome veggie sandwiches!
